Soak oats overnight with delicious healthy ingredients, creating the perfect breakfast for the next morning.

Ingredients

1 Peeled and Cored Apple

2 Apricots, stones removed

6 Ginger Soaked Prunes*

10g Chia Seeds

50g Dairy Free Yoghurt

130g Gluten Free Jumbo Oats

150g Water 

Method

Blend Apple, Apricots, Prunes, Chia and Yoghurt. Mix in Oats. Mix in water. Leave in the fridge overnight. Spoon into glasses and serve topped with berries, or more prunes and a teaspoonful of dairy free yoghurt.

 

*Ginger Soaked Prunes

Peel and slice a thumb sized knob of ginger. Bring to boil with 150g water in a small saucepan. Once water boils add 200g prunes and turn down to a simmer for 5 minutes. Turn heat off, allow to cool then use in recipes.
